Crochet Hat sizes with this Double crochet pattern or HDC pattern:

Instructions:
I hook
red yarn
ch 5- slip stitch to form a ring,
rnd 1. ch 3, 11 dc in ring, join with sl st. on top of ch 3. -12 sts.
rnd 2. ch 2, dc in same st. as joining, 2dc in each st. around. join with sl st on top of chain 2. -24 sts.
rnd 3. ch 2 counts as the first stitch, *2dc in next st., dc in the next stitch, repeat from *around, join with sl st. -36 sts.
rnd 3. ch 2 counts as the first stitch, *2dc in next st., dc in the next stitch, repeat from *around, join with sl st. -36 sts.
rnd 4. ch 2, dc in the next st., 2dc in the next st., *dc in the next two stitches, 2dc in the next stitch, repeat from *around, join with sl st. -48 sts.
rnd 5. *ch 2, dc in each st around, join sl st., *repeat. continue until the hat reaches 7 inches, sl st. fasten off. (if this is a smaller size the length will be shorter, look above for sizes and what hook to use.)
Ear flaps: If you would like to add ear flaps
Make 2
I hook, red yarn
1st ear flap, you can slip stitch onto the side of the hat with your red yarn, begin the dc stitches, (like to have the seam in the back of the hat, so I do the ear flap on the side of the hat)
2nd flap, fold hat in half and sl st in dc directly across from the last dc from the other ear flap. follow directions below for both ear flaps.
ch 2. dc in the next 11 dc stitches, turn. -11 sts
ch 2. dc2tog. dc in the next 6 stitches. dc2tog. dc in the last st. turn. -9
ch 2. dc2tog, dc in the next 4 stitches. dc2tog. dc in the last st., turn. -7
ch 2. dc2tog, dc in the next 2 stitches. dc2tog. dc in the last st. turn. -5
ch 2. dc2tog twice, dc in last st. cut yarn and pull through -3
The braid from the center of the ear flap at the bottom, I hook, use red yarn, with a sl st in the center of the bottom of the ear flap and chain 30, and sl st it off and cut yarn.
Eyes:
h hook
white yarn
Make 2
ch 2, work 5 sc in the 2nd chain from the hook. (5sc)
Rnd 1. work 2sc in the each stitch around, sl st. (10sc)
Rnd 2.* 1sc in the next stitch, work 2sc in the next stitch, *repeat sl st .(15sc)
Rnd 3. * 1sc in the next two stitches, work 2sc in the next stitch, *repeat, sl st. (20sc) fasten off
Pupils: Make 2,
G hook,

Place the pupils in the center of the eyes, sew the eyes above the mouth.

Rnd 5. work 2sctog 10 times in each stitch around, sl st. (7sc) fasten off.
Stuff the nose with yarn and place the nose above the mouth.

Half Double Crochet Hat instead of the Double crochet hat, optional You could also do this hat as a hdc hat too: Which would be a tighter stitch, I like both, dc hat is faster to do, but not as warm. Use the hook chart above for sizes too. Hdc pattern instead of dc pattern half double crochet hat instead of double crochet I hook red yarn, Size for a child's head (toddler), Use a larger hook for a larger head or smaller hook for smaller head, or increase a round.
Instructions: I hook, red yarn, ch 5, sl st, to form a ring. rnd 1. ch 2 (count as one hdc), do 9 hdc in the ring, sl st. (10 hdc) rnd 2. ch 2, do 2hdc in each stitch around, continue around, without a slip stitch (start to use a marker) (20 hdc) rnd 3. *do hdc in the next stitch, 2hdc in the next stitch, *repeat around, continue around, no slip stitch or chain, (I would use a marker so you can keep track of your increased rounds) (30 hdc) rnd 4. *do hdc in the next 2 stitches, 2hdc in the next stitch, *repeat around, continue around. (40 hdc) rnd 5. *do hdc in the next 3 stitches, 2hdc in the next stitch, *repeat around, continue around. (50 hdc) rnd 6. *do hdc in the next 4 stitches, 2 hdc in the next stitch, *repeat around, continue around. (60 hdc) rnd 7. *do hdc in each stitch around,*repeat until you hat measures 7 inches long
Ear flaps:
Make 2
I hook , use red yarn
For the first ear flap, continue from your hat. 2nd flap, fold hat in half and sl st in hdc directly across from the last hdc from the other ear flap. follow directions below for both ear flaps.
ch 2. hdc in next 14 stitches, turn. -14 sts
ch 2. hdc2tog, hdc in the next 9 stitches. hdc2tog. hdc in the last st., turn. -12 sts
ch 2. hdc2tog, hdc in next 7 stitches. hdc2tog. hdc in last st., turn. -10 sts
ch 2. hdc in each stitch across, turn. -10 sts
ch 2. hdc2tog, hdc in the next 5 stitches. hdc2tog. hdc in the last st., turn. -8 sts
ch 2. hdc in each stitch across, turn -8 sts
ch 2. hdc2tog, hdc in the next 3, hdc2tog. hdc in the last st., turn -6 sts
ch 2. hdc2tog, hdc in next 1, hdc2tog. hdc in the last st., turn. -4sts
ch 2. hdc in each stitch across, pull through and fasten off. -4 sts

Trim: use red yarn, sc around the hat and ear flaps, do the same for the features as seen above.
The braid from the center of the ear flap at the bottom, I hook, use red yarn yarn, with a sl st in the center of the bottom of the ear flap and chain 30, and sl st it off and cut yarn.

Thank you so much for this! I just finished an Elmo blanket for someone and I'm going to whip this up as a "gift with purchase"! I have a quick question though, is the mouth done with an H? It's the only piece not labeled with a hook.
